When I first heard of combining tomatoes and berries, I thought "um... just NO", but then seeing strawberries used in savory dishes more and more piqued my interest enough to try it for myself. It's a winner, y'all. Besides the incredible antioxidant factor you receive from both these foods, not to mention combining them, the flavor combination is perfect. Acidic and sweet, but not too sweet. One of my favorite recipes to make as an appetizer combines strawberries and tomatoes with balsamic vinegar, garlic and basil to create an unexpected version of bruschetta.
So when I was scrounging for smoothie ingredients the other day, I grabbed the cherry tomatoes that were stashed in front of the blender and looked at Ryan and said, "What if I throw these in there?"... and I made a face. Because I wasn't completely convinced it would work. But after blending them with the frozen berry mix and coconut water that was already in the blender, I gave it a taste and knew I was onto something. A few minor tweaks later, and this smoothie was born!

OK, onto the recipe.
Berry Tomato Balsamic Smoothie
Serves 2
1 1/2 Cups frozen berry mix (strawberries, blueberries, blackberries)
1 Cup cherry tomatoes
1 1/2 Cups coconut water
1 Tbsp flax seed
1 Tbsp chia seed
1 Tbsp raw honey
1/2 Tsp good quality balsamic vinegar
1 Tbsp maca powder
Blend together all the ingredients and serve in two large glasses!
