This week, I'm highlighting my three absolute favorite Fall smoothies so that hopefully we can curb our PSL cravings a little while longer.
Today's smoothie is like drinking pumpkin pie in a glass, and can you believe it's also Paleo, vegan, gluten free and Whole30 compliant!? I mean, that's a big promise -- a smoothie that tastes like pie and not only isn't BAD for you, but is actually GOOD for you. Check it out below. You're gonna love this one.

Ok, onto the smoothie!
The secret is roasted butternut squash!
Butternut squash has a wonderful inherent sweetness which comes out even more when roasted. I promise you, it's worth the extra step... don't just swap this for pureed squash in a can. What I love about using a whole, fresh butternut squash is that it can serve more than one recipe, once roasted. So in prepping for this smoothie, you can also prep for another meal, later on in the week.
When you buy your butternut squash at the grocery store,, go ahead and roast it in the oven as soon as you get home. Peel, chop, and de-seed the squash, then cube it up and throw it onto a couple of baking sheets in a single layer. You can season one pan with olive oil, salt and pepper to use in your food throughout the week, and keep the other pan plain for smoothies. Cook 30 minutes in a 450 degree oven.
About pie spice:
Pie spice is a blend of cinnamon, nutmeg, clove, ginger, and allspice. I've found that most store-bought Pie Spice blends are pretty heavy on the clove, but what I absolutely love about Penzey's is that it's heavy on the cinnamon (and their's is amazing) and also swaps the traditional allspice for anise seed. It includes a little vanilla sugar, too, which gives it a subtle sweetness.
Pie Spice is all about personal preference. If you have the time, you can, of course, make your own and adjust each seasoning to your taste. Or you can take my word for it and grab a bottle of Penzey's and be done with it. It's versatile for any pie, so if you do decide to buy some, you can rest assured that you'll be able to use it all season long.
Better than Pumpkin Pie Smoothie

Ingredients
1 Cup Roasted butternut squash cubes (see instructions below)
1 Frozen banana
1 1/2 Cups Almond milk
3-4 Dates, pitted
2 Tbsp oats (optional - leave out for Whole30 or Paleo)
1 Tbsp Chia seeds
1 Tsp Vanilla extract (or the seeds from 1/2 pod, if on Whole30)
1 Tsp Penzey's Pie Spice
1 Handful ice
Directions
Add all of the ingredients to a high-powered blender except for the ice, and whir away. Add in the ice and blend again until frothy!
