Cocktails with Mo | Bailey's and Honeyed Coffee Ice Cubes



We have a tradition in our family of going to my mother-in-law's house on Christmas Eve Night. We put the kids to bed, all excited for Santa to come and the adults stay up late whispering and laughing, wrapping presents and getting everything ready for a magical morning. Ryan's mom makes her famous sugar cookies and egg nog (and there's usually a point in the night when I end up slapping them out of Ryan's hand because he loves cookies...but I love him more).

It's such a special time we get to spend together and it automatically came to mind while I was trying to think of the best occasion for this cocktail. Playing Santa is one of the joys of Christmas I didn't expect to love so much. And it comes with perks! For me, this would be a much better treat than cookies and milk left by the hearth.

For the ice cubes:

1 cup coffee (leftover at room temp is fine)

1 Tbsp honey

1 Tsp milling spice with orange and cinnamon

In a large glass measuring cup, add honey, mulling spice and coffee. Stir to dissolve. Pour into four large ice cube moulds. If you don't have silicone cube moulds like the ones we used, definitely add them to your Amazon wish list but in the meantime, a regular ice cube tray will work. Freeze until completely solid.

For one cocktail:

One large or 5 small coffee ice cubes made using the above recipe

1/2 oz Vanilla vodka

1 1/2 oz Bailey's Irish Cream Liqueur

Place ice into the bottom of a double old fashioned glass. Add vodka and Bailey's. Stir and enjoy!
