Just because you watch kid movies doesn't mean you have to eat like one!
This sweet, savory and sophisticated(ish) Halloween snack is the perfect accompaniment to the 90s classic, Hocus Pocus. Sure, they look like toes -- it's Halloween. But they taste like an upscale restaurant appetizer.
Dead Man's Toes
Makes 24
24 pitted Medjool dates
1 4 oz Log garlic and herb goat cheese, room temperature
Zest and juice of 1/2 lemon
Salt and black pepper
12 slices Bacon, cut in half
Sliced almonds
Bloody Sweet Sriracha Sauce
2/3 C Brown sugar
1 Tbsp Apple cider vinegar
3 Tbsp Sriracha
1 Tbsp Soy sauce
1-2 Tbsp Beet juice (optional, for color)
1. In a mixing bowl, combine goat cheese with lemon zest, salt and pepper.
2. Stuff each date with about 1 teaspoon of the goat cheese mixture. Save the excess cheese.
3. Wrap each stuffed date in a piece of bacon, making sure to cover one end of the date completely with bacon to look like the tip of the toe. Secure with a toothpick and place on a baking sheet. Mold the wrapped date with your fingers a little to shape it into the form of a toe.
4. Cook under the broiler until the bacon is crispy, turning once, about 4-5 minutes on each side.
5. Using a tiny dab of leftover goat cheese, "glue" an almond slice to the toe (on the side you wrapped to look like the tip of the toe) to look like a nail. I've found that the almond slices look more toenail-like when turned sideways, as opposed to longways, which makes them look more like fingernails.
6. Drizzle some sriracha sauce on the "severed" end and also a little near the "toenail".
