This is the third and final recipe in my series of Healing Recipes to Fight Winter Colds! I hope you've benefited from what I've shared this week. I've already heard from some of you that this was timely info so I'm thankful for that.
This switchel is the most refreshing thing, like, ever. I opt for this instead of Gatorate or lemonade in the summer (but REALLY, NEVER Gatorade, people.) So this recipe gets much more use than just as a natural cold remedy, although it is great for that!
Fresh ginger and lemon juice combine in this healing tonic to pack a punch of Vitamin C and anti-inflammatory properties, which is great when you have swollen tonsils. The honey in the drink helps to coat the throat and suppress that annoying cough (plus it gives this the sweetness it needs!) and raw apple cider vinegar dries the sinuses and serves as a natural antibiotic.
I even water it down and put it in my kids' sippy cups. I tell them it's lemonade.
If you're new to ACV (that's what the cool kids are calling apple cider vinegar these days), you might be saying something like "seriously, you want me to DRINK vinegar??!"
Yes. I do.
And all I can say is this. Give it a chance. Start with this recipe. Or start by adding a little (like a tablespoon) to a smoothie! Appreciate it for what it is. You can't expect it to taste like juice... it ain't juice. It's vinegar. BUT, it is SOOO good for you, and you'll get used to it, I promise. I will also say, we don't use it for everything, like salad dressing... but if it's something I am intentionally making to heal or boost my body, this is the first thing I grab.

Boys, plug your ears (or cover your eyes)...
I even used it in a warm, shallow bath the other night hoping to get rid of a yeast infection. Instant relief. Not even kidding.
So that's my little case for ACV. Onto the recipe.
Switchel (or Lemon-Ginger Tonic)
Ingredients
2 Cups filtered water
1 Inch piece of fresh ginger, grated
4 Tbsp Raw apple cider vinegar (make sure you buy the kind with "the mother")
2 Tbsp Lemon juice
1 Tbsp Raw, unfiltered honey (or a little more, to taste. You want to be able to enjoy it enough to get it down)
Add all the ingredients to a small pitcher or large glass measuring cup and stir. Serve chilled. Store covered in the refrigerator.
