Pumpkin, Blueberry and Flax Smoothie

Today's smoothie is the third and final in my series of Three Fall Smoothies You Must Try Now!

Blueberry Pumpkin and Flax is one of my favorite blends because it's not a traditional combo, which makes it even more surprising when you taste how delicious it is!
Bonus, it's made with easy-to-find ingredients that you can even pick up at Aldi!

Something I love about Aldi's flax seed, especially in a smoothie like this one, is that they're roasted. The toasty, nutty flavor adds a whole layer to this smoothie that you wouldn't get, otherwise, and it's just divine.

While this smoothie is decadently creamy, it's incredibly light in flavor. I really do think you're going to be so surprised by this one, in a good way!
It would make a GREAT smoothie bowl, if you're into that kind of thing. There are so many ways you could top this bowl for fall that would be AMAZING - pepitas, granola (something with cinnamon would be YUM), toasted pecans or walnuts... the possibilities are endless. If I were going to thicken this smoothie recipe into something that could be eaten with a spoon, I'd just add more ice and more frozen blueberries.

Pumpkin Blueberry Flax Smoothie
adapted from Superfood Smoothies by Julie Morris
Ingredients
1/2 Cup Canned pumpkin puree
1/2 Cup Frozen blueberries
2 Tbsp Flax seeds
4 Dates, pitted
1 Cup Coconut water (plus more, in case you need to thin it out)
1 Cup Ice
Directions
Add all of the ingredients to a high-powered blender except for the ice, and whir away. Add in the ice and blend again until frothy!
