Saturday and Sunday mornings are my favorite time to experiment with breakfast recipes. We keep our eating pretty clean and simple during the week -- smoothies, fruit, Greek yogurt -- so, on the weekends feel a little better about serving the indulgent, carb-y things we all love, like biscuits, cinnamon rolls, or kodiak cakes (which I tell myself are actually good for us).
This Sunday, I was on my way to the oven to get it pre-heating when I realized I only had 30 minutes to get myself and the girls ready for church. Any baking was out of the question. I did a quick Pinterest search for ideas that used oats (we always have them on hand and they're super fast) and blackberries (we found some gorgeous ones at the farmer's market on Saturday). Everything I found would take way more time and energy than I was willing to spend, but my search did spark an idea. There were lots of recipes for oatmeal bars with blackberry jam and crumble-like topping. Into the kitchen I went, knowing I had about 10 minutes, and I resorted to intuition to figure out the rest.
What resulted was this amazingly satisfying blackberry oatmeal brûlée, which I know we'll end up making again and again, using different fruits as they come into season.
My kids wanted seconds, and that, for me, is a huge win.
The oatmeal part comes together in about 5 minutes, (maybe even faster, if you're using quick cook oats like me). So make sure you go ahead and pre-heat your broiler at the very beginning.
Then, all that's left to do is transfer the thickened blackberry oatmeal to a square baking dish, top it with brown sugar, and stick it under the broiler until it browns.
Watch it closely under the broiler, so it doesn't burn! You're looking for a solid sheet of melted sugar with some golden brown spots, the same way you would with creme brûlée. When you go to serve it, the top will crackle as you dip your serving spoon down into the soft oatmeal part.
The best part about this recipe is that it really does feel and taste super indulgent, but really it's not all that bad!
