I am not one to easily admit this publicly, but I was actually really surprised at how well my kids liked this smoothie. Obviously, it was a winner in my book, but I didn't go out of my way to make it kid-friendly, so I was super excited when Julep and Charlie both asked for more!
We get sunflower sprouts in our CSA basket pretty regularly, and I typically throw them on top of scrambled eggs or in a salad. I decided to make a smoothie out of them this time, though, because I love to switch things up and I have been stuck in a little bit of a smoothie rut. This was just the thing to shake me out of it.
If you don't have a place to get sunflower sprouts locally, it's easy to grow your own! You just need a mason jar and these seeds.
The flavor here is a nutty, green, earthy, "healthy" taste, but it's all perfectly balanced by a sweetness that comes naturally from the banana, grapes, and coconut water.
Sunflower sprouts are high in zinc and B vitamins, and they're a great source of vegan protein, which makes this smoothie perfect as a pre-workout drink. It's also pretty light, as in it doesn't sit heavy on the stomach like some protein smoothies.
Sprout some sunflower microgreens and give this a try!
Sunflower Sprout Green Smoothie
Ingredients:
2 Handfuls sunflower sprouts
1-2 Tbsp hemp seeds (optional)
1 Handful green grapes
1-1 1/2 Cups coconut water
1 Banana
1 Handful ice
Directions:
Add everything to the blender except for the ice. Blend until smooth. Add in the ice and blend again, until completely smooth and frothy.
