Cocktails with Mo | Pineapple Sage Milk Tea, or as we like to call it, "The Wild Card"



What happens when you have gorgeous cream-top milk, pineapple sage in the yard, and a gifted bottle of locally crafted aquavit? Apparently, this cocktail. Crafting this drink felt admittedly haphazard as we were going about it, hence the name "The Wild Card". Something clicked, however, as we continued to test and add ingredients -- Milky tea is not a completely new idea! Heck, it's been a staple in Thailand forever. We decided to claim that this is what we were going for all along and tell anyone who questions us to just shut up and try it. The aquavit lends an herbal quality reminiscent of tea, enhanced by a touch of sweetness from the orange curaçao and warmth from the sage. Aromatic bitters give it depth and body. The result is a wonderfully light yet soothing nightcap perfect for these colder evenings. Don't be intimidated by the ingredients, as you can find them all in your regular liquor store and grocery store. Give it a try!


Make your own sage tea by bringing 1 cup of water to a boil, then adding 6-8 fresh sage leaves to let steep for 3-5 minutes. Remove the leaves and you're left with your own hot sage tea.

The Wild Card

1 Oz Aquavit (Mo and I were lucky enough to try Spirits of French Lick aquavit which has yet to hit the market but is delicious! Keep an eye out for it!)

1/2 Oz Orange curacao

3 Dashes aromatic bitters

Sage tea

Whole milk or cream

Stir together the aquavit and curaçao in the bottom of a teacup. Top with the tea and a splash of milk. Stir again. Add bitters.
