I warned you guys that this week would be protein-packed, and I promise to deliver, but in a totally non-yucky-body-builder-food kinda way. This week's meal plan says, "We're just over here tryna get swole... but, like, food is still bae."
I'm excited (well... let's say excited and also a little daunted) to be challenging myself with adding a full recipe post to each weekly line-up. So, you'll see a meal here on the meal plan every week, and then I'll go into depth on the recipe with photos later on in the same week. This week, the recipe will be for these killer basil, lemon and greek yofurt marinated chicken skewers and a blackberry, feta, arugula salad that I made over the weekend and bought double the ingredients for (score... shop once, eat twice!) Both recipes come together in a pinch, taste like they could be served at a restaurant, AND are kid approved. Win, win, win.
As always, I started by taking inventory of my refrigerator and pantry. Here's what I already had:
Eggplant
Arugula
2 Chicken breasts
Blackberries
Feta
---------- [all of the above ingredients were left over from a weekend shopping trip]
Lentils
Eggs
Roasted red pepper in a jar
Dried cranberries
3 yellow onions
Shredded mozzarella
Sauerkraut (I can't get rid of this God forsaken sauerkraut)
Fresh basil, left over from the julep blog post
Chickpeas
Walnuts in the freezer
A bag of radishes
Carrots
Cilantro

Dinner: Lentils with Broiled Eggplant
TUESDAY
Gym at 5:00
Dinner: Basil, lemon and greek yogurt chicken skewers with blackberry, feta and arugula salad
WEDNESDAY
Yoga at 5:30
Dinner: Buddha bowl using up the radishes, salad greens, and garbanzo beans (I may also add in some frozen, steam-in-bag broccoli)
THURSDAY
Dinner: Roasted red pepper, spinach, and mozzarella frittata
FRIDAY
Dinner: Weird take on a Waldorf Salad with sauerkraut, apple, celery, dried cranberries and toasted walnuts (if this turns out good, I'll post the recipe next week!)
